Distillation is carried out in a traditional copper still in batches of 100 liters. Prior to distillation, the botanicals are infused for approximately 12 hours in alcohol, which is redistilled by placing these botanicals after infusion in a basket at the top of the neck of the still.

Distillation is carried out in a traditional copper still in batches of 100 liters. Prior to distillation, the botanicals are infused for approximately 12 hours in alcohol, which is redistilled by placing these botanicals after infusion in a basket at the top of the neck of the still.

Tannat flowers are distilled at the time of harvest, using only their stamens for distillation, which are immediately placed in the basket located at the head of the distiller. Since it is made at the time of flowering, this distillate can only be obtained for 2 to 3 days a year.

The distillate of the botanicals and that of the Tannat flowers are obtained with an approximate alcohol concentration of 86%. These distillates are mixed in each batch prior to packaging and the mixture is adjusted to 43% alcohol content.
