The orientation of each plot, on loamy and stony soils with steep slopes, give the vineyard the ideal setting to deliver quality grapes. The best agricultural practices with low environmental impact allow us to conduct a sustainable certified production.

HARVESTING & WINEMAKING
The grapes were harvested in February from the SUR 3 plot, located in the coldest area of the vineyard, just two kilometers from the Atlantic Ocean. The soil has a silty loam texture with a good amount of metamorphic and syenitic rock. The plants are of mass reproduction on rootstock SO4 and Gravesac.

ELABORATION
The fruit entered the cellar cold. The bunches were destemmed and the juice with the peels went to the press, where they remained for a short maceration time. Then, the must was subjected to a cold static settling for 48 hours. Alcoholic fermentation was activated in stainless steel tanks with selected yeasts at 16 °C.

Once the fermentation was finished, the wine was kept over its fine lees for several months. This aging work gave the wine a distinctive character in aromas and flavors, as well as volume and expression in the mouth. This wine, which had no contact with oak at all, was stabilized and filtered before being bottled by the end of December 2023.
