Cerro del Toro Pinot Noir Atlántico

We grow the vine at the foot of Cerro del Toro, in Piriápolis, just two kilometers from the coast in a microclimate strongly influenced by the sea breeze. The orientation of each plot, on loamy and stony soils with steep slopes, give the vineyard the ideal setting to deliver quality fruit. For a sustainable production, we carry out the best agricultural practices and our packaging has minimal environmental impact. 

Pinot noir full of fruit and elegance, with typical colour of the variety in cold areas. Strawberry and cherry aromas dominate, with a smoky and earthy background. On the palate it is fresh and persistent, very pleasant to drink.

The grapes were harvested at the beginning of February from the SUR 4 and SUR 7 squares, from the coldest sector of the vineyard. The soil where this Pinot Noir grows has a loamy texture, with the presence of calcium carbonate and metamorphic rocks. The plant clones are 667 and 777.

Once the fruit entered the winery, the clusters were destemmed, and the must was subjected to preferential cold maceration for 24 hours. Alcoholic fermentation was activated in stainless steel tanks with selected yeasts and after 10 days the pomace was pressed. During maceration (at 24°C) closed pump-overs and gentle stomping were carried out to control the extraction of aromas and flavours. The wine underwent malolactic fermentation and had no contact with oak during aging.
